traditional smal batch comestibles

ANNIE Smithers creates by hand traditional small-batch comestibles at Kyneton in the central highlands of Victoria, north-west of Melbourne. These preserves, jellies and jams are meticulously made to maintain the fabulous flavour and texture of the fresh produce used — paddock-fall fruits, raspberries rescued from a marauding goat, bags of oranges left on the back step by generous friends and neighbours. Annie’s fascination with seasonal jams and preserves developed from her days at Lavandula, a working farm that strived to do the right thing by the grower, seasons and produce. It led to a consuming passion to preserve, pickle, bottle, pot and relish all things precious, abundant and available from the local gardens, orchards and farms.
