
AVRUGA is made by Spain's Pescaviar from sustainably-fished atlantic herring which is then smoked and infused with squid ink. It has become a food of choice — as an alternative to caviar — for chefs and consumers concerned for the future of sturgeon, the source of prized beluga caviar. Sturgeon in the Black and Caspian seas and Siberia's wild rivers has been over-fished to satisfy demand for beluga, with the United States' Pew Institute for Ocean Science finding in 2005 that endemic sturgeon species — which, when mature, can measure up to five metres in length and weigh more than 1000 kilograms — have become critically endangered.
Avruga herring black pearls have a soft, smoky flavour with citrus hints and can be used to create fabulous blinis. Australian Gourmet Traveller recommends serving avruga with sustainably-fished sashimi-grade tuna, lebanese cucumber and caramelised red wine or caramelised balsamic vinegar.
