ROMY Surtees and Glenn Pattinson gather and produce superb varietal honey from Western Australia's forests and bush. Elixir is raw, gravity-filtered honey available in partcular varieties, depending on the season. Using only small hives, Romy and Glenn pack the honey as soon as it comes off a hive and add nothing artificial - the use of pesticides and antibiotics is illegal in Western Australian beekeeping.

'We keep all the good things the bees have collected by gently taking the honey from the combs,' they say. 'We do not heat our raw honey; we filter by gravity and we don’t strain the good bits out. We tap into glass jars. So you get honey as nature intended. Sometimes thick and sometimes runny, always with all the goodness of live enzymes, trace minerals and low glycemic index. And all the taste.'

Elixir's jarrah honey, known as TA10+, is available only in the year of
Eucalyptus marginata's flowering cycle, which occurs every even year.
