He has tapped his city’s cultural diversity to create a range of spice blends, indian masalas, sauces, marinades and syrups, presented with a highly-sophisticated edge. Peter Watson sun-dried tomato sauce has become a hallmark line, together with chimi churi and sarakwak chicken marinades, anchovy essence, tomatoes in olive oil and balsamic vinegar, red onion marmalade, chermoula paste and superbly aromatic indian masalas, including chicken tika, tandoori and vindaloo.
