
RISO della Scala vialone nano is an indicazione geografica protetta - or IGP, protected denomination of origin - rice produced on 35 hectares of rich farmland in Verona in northern Italy. Its miller, the Cremonesi family, is one of only 15 members of the consorzio per la tetula del riso vialone nano veronese - a provincial consortium of vialone nano rice producers in Verona officially recognised by the Italian government and European Union. Producers must meet strict standards in farming and processing to achieve IGP certification and consortium membership. Riso della scala has a grain breakage threshold of just 1.5 per cent, compared with the three per cent imperfection standard set for IGP participants. Chemicals are not used in any stage of processing.
Riseria Cremonesi was established in 1951 by Egidio Cremonesi in Bovolone on Verona's southern plain. It remains in the Cremonesi family's hands to this day, with Egidio's sons Andrea and Paolo managing the company.
Riso della scala carnaroli is a superfino long grain known as the 'king of rice'. Its vialone nano is a semifino, a short grain rice and a parent of modern risotto rice, and the variety sought by discerning cooks and chefs.
